Maple Dijon Salmon

The wonderful, fleeting days of summer are upon us, pandemic homeschool is adjourned, and we all get to take a bit of an exhale. I’d like to give a virtual high five to all of my fellow parents who made it through this crazy season of quarantine and “distance learning”. We made it to summer at long last!! This calls for celebration and I have the perfect meal for you to do so.

Maple Dijon Salmon. It comes off as a fancy meal but takes very little effort to pull off. Salmon is my favourite fish to serve, not only because it’s absolutely delicious, but also due to it’s impressive health benefits. Salmon is packed with Omega-3 Fatty Acids, as well as other vitamins, minerals, and antioxidants proven to aide in brain health and reduce the risks of heart disease, high blood pressure, and stroke. Not bad for a weeknight meal?!

This salmon pairs gorgeously with grilled or roasted vegetables, your favourite starch to mop up the addictive sauce (new baby potatoes, rice, or some sourdough bread maybe?), and a chilled glass of white wine or sparkling water. May I suggest our favourite Canadian winery we just visited? Kick back on the patio and enjoy this triumph of a meal. Cheers to summer!!

Maple Dijon Salmon

A super simple, packed full of flavour salmon recipe that is sure to please. This recipe is gluten, dairy, and refined sugar free! Delicious.

Ingredients

  • 1 large salmon filet, boneless skinless
  • 2 tbsp butter or ghee for dairy free
  • sea salt and fresh ground pepper to taste
  • 2 tbsp pure maple syrup
  • 1 tbsp dijon mustard
  • 1 tbsp liquid aminos or soy sauce
  • 1 lemon, juice of
  • pinch crushed red pepper
  • fresh chopped herbs (parsley, chives, cilantro, dill, or basil are all good options!) and lemon wedges optional garnish

Instructions

  • Preheat oven to 425°F. Line a 9×13" pan with parchment paper. Pat the salmon dry with paper towel and place in the lined baking pan. Break up the butter into smaller pieces and scatter across the salmon. Generously season the fillet with sea salt and fresh ground pepper
  • Combine remaining ingredients in a bowl or jar and whisk or shake to combine.
  • Pour mixture over salmon. Optional: Cover and set in fridge to marinate for up to 30 minutes while you prepare the rest of your meal.
  • Bake for 15 minutes. Set oven to broil to finish the salmon for 3-5 minutes, keeping a close eye to not burn, until nicely browned on top. Do not skimp on this step, the caramelization from the broiling provides so much flavour! Scatter with fresh herbs and serve with lemon wedges if desired, and don't forget to spoon the extra pan sauce on top!

9×13″ baking pans with lids, 2 pack – 9×13″ pans are one of my most used pans. Perfect for brownies, bars, and cakes, as well as savoury dishes like roasted meat or vegetables. I love that these pans come with lids – perfect for freezing or refrigerating your food in or taking it to share somewhere! I couldn’t find my exact pans linked on amazon (because they are several years old!), but these are very similar with great reviews!
