Honey Mustard Chicken

I cook a lot. I’ve got 4 kids, with a 5th due in a couple of months. Our oldest two can out eat my husband and I any day – it is actually mind boggling! We all lead very active lifestyles… which leads to very active appetites. I value good nutrition, eating real food, and sticking to a budget, so the majority of our meals are made from scratch (though I am happy to use shortcuts when needed, rest assured!). With 3 meals a day plus snacks for the whole crew, every day, it is imperative that I have a repertoire of foolproof, delicious, relatively quick and easy recipes in my back pocket. So here I am, bringing you another supper time favourite to add to your rotation. It ticks all the boxes – healthy/nutritious, tastes amazing, made in 20 minutes with mostly pantry staples, budget friendly, whole family likes it… YES!

Before you get scared off by the mustard portion of the title, let me ease your apprehension and promise you this chicken does not have an overpowering mustard-y taste! The honey, chicken broth, garlic, and spices really round it out to make a super flavourful, sweet and tangy sauce that is universally appealing. I’ve been using my homemade mustard leftover from a charcuterie night over the holidays and it is sooooooo good in this recipe. You can use dijon mustard or grainy mustard (or a mix of the two) – any mustard you like! This recipe is gluten free and dairy free with the exception of butter. Sub out ghee or vegan butter to make it completely dairy free. My dairy sensitive son tolerates butter well so we use it quite happily!

This recipe starts out with the same steps as my Perfect Pan Seared Chicken, we simply finish it off with a quick pan sauce and serve… ready in 20 minutes or less! It’s delicious served over rice, mashed potatoes, roasted potatoes, couscous, really any starchy side that can soak up that delicious pan sauce! We also like serving it with roasted broccoli, garlic butter green beans, roast vegetables, or a nice green salad on the side. These are the kind of meals I can throw together any night of the week and feel good knowing we are having a nutritious meal that we all enjoy eating. Such a win!

Honey Mustard Chicken

A super flavourful, quick, and easy chicken breast recipe that is sure to become a regular in your meal rotation! The chicken pairs perfectly with rice or roasted potatoes and steamed vegetables. This recipe comes together in under 30 minutes and is gluten and dairy free!

Ingredients

  • 3 large boneless skinless chicken breasts cut into 6 portions
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • sea salt and fresh ground pepper to taste
  • 1/4 cup unsalted butter use ghee or vegan butter for dairy free
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp coconut aminos liquid aminos or soy sauce work also
  • Pinch red chili flakes
  • handful fresh chopped parsley, cilantro, or chives optional garnish

Instructions

  • Season the chicken breasts with olive oil, Italian seasoning, and a generous amount of sea salt and fresh ground pepper.
  • Heat a large skillet on medium low heat. Sear the chicken without moving for 6 minutes, until nicely browned. Flip the chicken and sear for another 3 minutes. Remove to a plate.
  • Add remaining ingredients to the pan (except garnish), whisk to combine and bring to a boil.
  • Lower heat, add chicken breasts, cover and cook for 5 minutes or until chicken is cooked through. If you like a thicker, more reduced sauce, simmer the chicken uncovered.
  • Garnish with fresh herbs, if desired, and serve.

Coconut Aminos – This is an excellent healthy substitute for soy sauce. It is gluten free, soy free, much lower in sodium than soy sauce, and packed with amino acids and active enzymes. And it tastes delicious, very similar to soy sauce.

Ghee– Clarified Butter. This is the best lactose free substitute for butter because it is made with butter so you get the same rich buttery flavour without the dairy. It’s also a valuable Source of fat soluble Vitamins A, D, E, and K. How cool is that?!

    Every single kid loved this meal, even my kid who doesn’t love chicken. It was just as easy as you said it would be and super flavorful. Every bit of sauce got scraped out of the pan.
