Instant Pot Chicken Tacos

The sweet days of summer are upon us and in my neck of the woods, it doesn’t last long! This calls for easy meals – less time in the kitchen and more time outside! Well, I have just the recipe for you.

First of all, tacos. Who doesn’t love them? Infinitely customizable (translation – you can use whatever you have on hand!!), filled with fresh crunchy ingredients, juicy pulled chicken, and just the right amount of kick… you’re going to want to make these all summer long!

Perhaps what I love most about this recipe is the ease of it all. All you do is throw the ingredients into the Instant Pot (you can even use FROZEN chicken, guys!) and set it to pressure cook. That’s it. I’m not even going to make you sear it first. You’re welcome 馃檪

After it’s done pressure cooking the chicken will be fall apart tender, you can just shred it up and it’s ready to go. This meat has a nice balance of sweet and spicy, using my go to spices for taco seasoning. And unlike those expensive single serve taco seasoning packets they sell at the grocery store, this recipe is gluten, dairy, and refined sugar free!

As for toppings, there is really no right or wrong way of going about this. I do think that less is more – you don’t need ALL the things. Pick a few of your favs and go with that. I went with shredded romaine lettuce, cherry tomatoes, sliced avocados, fresh cilantro, and chipotle aioli (the ultimate taco condiment in my opinion!). Other yummy toppings would be shredded cabbage, pickled onions, grilled corn or pineapple, pico de gallo, guacamole, refried beans, black beans, jalape帽os, sliced radish, queso fresco or jack cheese, etc.

Of course this chicken is fantastic in tacos, but you could also use it to make taco salad, burritos, quesadillas, nachos, wraps, nourish bowls, soup, sandwiches… so many things!! Make a big batch and keep it in the fridge throughout the week for easy meals. Hello summer cooking, that’s the way I like it!

Instant Pot Chicken Tacos

A quick and easy but totally delicious meal that's perfect for summer. You don't have to heat up the house, let the Instant Pot do the work! This chicken is delicious on tacos but you can also serve it in burritos, taco salad, nourish bowls, sandwiches, on pizza, in soup… it's a recipe you'll want to come back to over and over again!

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts fresh or frozen (cooking times will differ)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 4 cloves garlic, minced
  • 1 tbsp coconut aminos
  • 1 tbsp Worcestershire sauce certified gluten free if necessary
  • 1 tbsp maple syrup
  • 1 cup chicken broth pineapple juice works well also

For the Tacos (use whatever toppings you like):

  • corn tortillas
  • shredded lettuce or cabbage
  • diced tomatoes
  • sliced avocados
  • fresh cilantro
  • chipotle aioli
  • Other topping ideas: pickled onions, grilled corn or pineapple, pico de gallo, guacamole, refried beans, black beans, jalape帽os, sliced radish, queso fresco or jack cheese, etc.

Instructions

For the Chicken:

  • Add everything to the Instant Pot*. I like to add the chicken, followed by the spices, and then the liquid ingredients, but I don't think the order matters much! You can use fresh or frozen chicken breasts (I've used frozen this time).
  • Secure the lid and set to manual pressure.
    For fresh/thawed chicken breasts, cook on manual pressure for 10 minutes with 8 minutes natural pressure release.
    For frozen chicken breasts, cook on manual pressure for 14 minutes with 10 minutes natural pressure release.
  • Once the natural pressure release is up, quick release the remaining pressure. Remove the chicken to a bowl and shred with two forks. Meanwhile, turn the Instant Pot on to Saut茅 Mode to simmer and reduce the liquid slightly.
  • Add the shredded chicken back to the Instant Pot, toss with the sauce, and season to taste.

For the Tacos:

  • While the chicken is cooking, wash and chop your desired topping ingredients. I went with shredded lettuce, halved cherry tomatoes, sliced avocados, fresh cilantro, and chipotle aioli.
  • Just before serving, heat the corn tortillas over a grill or in a frying pan until they start to brown, flip and repeat on the other side. Fill and serve!

Notes

*You could also make this chicken in the slow cooker. Add everything to the slow cooker and cook on low for 5-6 hours until chicken is fall apart tender. If using frozen chicken, cook for 6-8 hours on low.聽

Coconut Aminos – This is an excellent healthy substitute for soy sauce. It is gluten free, soy free, much lower in sodium than soy sauce, and packed with amino acids and active enzymes. And it tastes delicious, very similar to soy sauce.

Gluten Free Worcestershire Sauce – Worcestershire sauce is a staple ingredient for me for adding flavour to all sorts of soups, sauces, and meat dishes. I didn’t even realizes that the brand I was using had gluten in it, but thankfully gluten free Worcestershire sauce is readily available! Look for the ingredients to list “distilled vinegar” rather than “malt vinegar” to ensure it is gluten free, like this one from French’s.

    My whole family loved this meal! Usually my husband winces when I serve chicken. But he gobbled this yummy meal right up! The kids ate the leftover chicken for lunches for the next few days. It was tasty and easy and messy! We love having an “eat with your hands meal’ every week, and this was a hit. Also, this aioli sauce was superb! I made it mild and everyone loved it! Great work!
