No Bake Energy Bites

Nutrient dense no bake bites to keep you going on busy days. These beauties are Gluten free, Dairy free, and Refined Sugar Free.

Ingredients

  • 2 cups old fashioned oats gluten free certified if Celiac
  • 1 cup unsweetened coconut flakes
  • 1/2 cup ground flax seed
  • 1/2 cup collagen peptides or sub more flax, chia, or hemp seed
  • 1/2 tsp sea salt
  • 1 cup natural peanut butter creamy
  • 1/2 cup coconut oil
  • 1/2-2/3 cup unpasterized honey
  • 1 cup dairy free semi-sweet chocolate chips

Instructions

  • Combine the dry ingredients in a large mixing bowl.
  • Gently melt together the peanut butter and coconut oil in a saucepan over low heat until homogenous (you can also use the microwave). Remove from the heat, add the honey, and stir to combine. You don't want to cook or boil the honey as this will kill the beneficial nutrients in it, but the residual heat from the peanut butter and coconut oil will help it to combine smoothly.
  • Add the peanut butter mixture to the bowl and stir to combine until everything is moistened. Add chocolate chips (make sure the mixture is cool enough to not melt the chips) and combine well. I like to get in there with my hands to make sure everything is evenly distributed.
  • Taste the mixture and adjust to your liking. Start with the 1/2 cup of honey, if you would like it sweeter, add a bit more. If the mixture feels too dry, add a splash of nut milk or some more melted coconut oil.
  • Refridgerate for 30 mintues. If I'm in a hurry I'll skip this step but it does make for easier rolling!
  • Roll into 2" round balls. I scoop out a lump at a time with a tablespoon and roll between my palms. If the mixture is sticking to your hands you can either refridgerate for longer or keep your hands moistened with water to repel the mixture. Keep the bites stored in the refidgerator or freezer and enjoy!
  • Oh and by the way the extra little bits in the bottom of the bowl that don't want to form in to a bite are PERFECT for going on top of some plain greek yogurt or coconut yogurt with a tiny swig of pure maple syrup. You're welcome :)
