No Bake Energy Bites

I fell in love with these things years ago when a dear friend of mine (shoutout to Nicole!), made me a batch when I was expecting my first baby. I kept them in the freezer and reserved them for moments of desperation in the middle of the night when the 12th feeding session in 24 hours struck and I literally felt like the life was being sucked out of me… by the sweetest, cutest little human imaginable, of course! Any of you nursing mama’s know the feeling of being able to guzzle a litre of water and pound back a few heaping tablespoons of peanut butter just to keep you going, am I right?!

Nursing mama or not, these no bake energy bites are packed with nutrient dense ingredients to fuel your body and keep you full until the next meal. I keep a steady batch of these in the fridge, my whole family loves them! They’ve got a whole grain carb source of old fashioned oats, healthy fats with natural peanut butter and coconut oil, protein and other health benefits with collagen (skip back to my collagen post to learn more about this ingredient), the superfood ground flaxseed (just check out this post for 10 amazing benefits that come with this mighty seed), and the unrefined, antioxidant-rich sweetness from raw honey. Plus some fun mix-ins like unsweetened coconut and dairy-free chocolate chips.

The ingredient list is very flexible – don’t have collagen? Feel free to sub more flaxseed or another nut or seed of choice. Allergic to peanuts? Try almond or sun butter. Don’t like chocolate? I’m sorry, I can not relate, but go ahead and throw in some raisins and cinnamon instead. Sliced blanched almonds are a good substitute for coconut, and you can sub any liquid sweetener of choice for the honey. If you make sure to buy certified gluten-free oats, these babies are also gluten and dairy free. They take just a few minutes to throw together in a bowl and roll into balls. Your future self will be brimming with gratitude when you venture into the fridge looking for SOMETHING to tie you over and you see these beauties sitting on the shelf. They are a lifesaver. Okay, that’s a bit dramatic… but when you’re hangry and have a bunch of kidlets to load up for soccer, or your umpteenth exam to get to, or that next shift at work, straight after a workout, on a busy day of errands… you know what I mean! No Bake Energy Bites

Nutrient dense no bake bites to keep you going on busy days. These beauties are Gluten free, Dairy free, and Refined Sugar Free.

Ingredients

  • 2 cups old fashioned oats gluten free certified if Celiac
  • 1 cup unsweetened coconut flakes
  • 1/2 cup ground flax seed
  • 1/2 cup collagen peptides or sub more flax, chia, or hemp seed
  • 1/2 tsp sea salt
  • 1 cup natural peanut butter creamy
  • 1/2 cup coconut oil
  • 1/2-2/3 cup unpasterized honey
  • 1 cup dairy free semi-sweet chocolate chips

Instructions

  • Combine the dry ingredients in a large mixing bowl.
  • Gently melt together the peanut butter and coconut oil in a saucepan over low heat until homogenous (you can also use the microwave). Remove from the heat, add the honey, and stir to combine. You don't want to cook or boil the honey as this will kill the beneficial nutrients in it, but the residual heat from the peanut butter and coconut oil will help it to combine smoothly.
  • Add the peanut butter mixture to the bowl and stir to combine until everything is moistened. Add chocolate chips (make sure the mixture is cool enough to not melt the chips) and combine well. I like to get in there with my hands to make sure everything is evenly distributed.
  • Taste the mixture and adjust to your liking. Start with the 1/2 cup of honey, if you would like it sweeter, add a bit more. If the mixture feels too dry, add a splash of nut milk or some more melted coconut oil.
  • Refridgerate for 30 mintues. If I'm in a hurry I'll skip this step but it does make for easier rolling!
  • Roll into 2" round balls. I scoop out a lump at a time with a tablespoon and roll between my palms. If the mixture is sticking to your hands you can either refridgerate for longer or keep your hands moistened with water to repel the mixture. Keep the bites stored in the refidgerator or freezer and enjoy!
  • Oh and by the way the extra little bits in the bottom of the bowl that don't want to form in to a bite are PERFECT for going on top of some plain greek yogurt or coconut yogurt with a tiny swig of pure maple syrup. You're welcome 🙂

    love these! Where do you buy your chocolate chips from?

      Thanks! I buy the Kirkland brand of chocolate chips from Costco, I like that they’re dairy free! But if I’m looking to do dark chocolate I buy the big 70% dark chocolate bar from superstore (PC brand) and chop it up 🙂
